Hill garlic rasam
A winter tonic disguised as dinner

Method
Medicinal, warming, restorative. Poured over hot rice, it fixes almost everything.

Soak tamarind in ½ cup warm water; extract juice.

Crush 10 cloves of garlic coarsely. Chop tomatoes.

Temper mustard, cumin, curry leaves and crushed garlic in ghee.

Add tomatoes and cook till soft. Add rasam powder, tamarind, 2 cups water, salt.

Simmer — never boil. Finish with the remaining 5 whole garlic cloves.
